I'm not a worry wart and had my kids hiking early. I went to the Grand Canyon with a 4 year old. By the way, her comment was "it's just a big hole. I want to go back to the big trees." (Redwoods and Sequoias from earlier in the trip).
Yellowstone isn't about bears or cliffs - I worry about scalding springs that are a foot off the narrow path. Water looks beautiful, not dangerous. Sure you can hold the child the whole time but that gets old quick. You could also skip the springs but the diversity of Yellowstone is what makes it so majestic.
Smokies offers outdoors, places for a young child to run, and touristy stuff for a change of pace. Go to Yellowstone in a couple years.
