Obviously up to the OP....but as one who has taken kids, nephews/nieces, grandkids on any number of trips into the "wilderness" (whether State Park, NP, or possibly approaching real wilderness), I'd suggest to take the Yellowstone trip if you want to. Don't take it if you don't want to...but don't let the presence of the 20 month old be the barrier to the trip.
You'll have to obviously be more cautious and do a bit more pre-planning with a 20 month old...but I'd think that would be expected as part of the trip and not an earth-shaking event.
