I was thinking of taking mine out for a Winter trip, too, and have similar concerns. I've fully winterized and my gray and black tanks hang underneath. BUT, my freshwater tank is inside, under a bed where it gets plenty of heat. All of my freshwater plumbing is indoors and in areas where radiant heat from the furnaces keep it warm (I assume this is by design). So that leaves the black and gray tanks as concerns. I can I just dump some RV antifreeze in there ahead of time? The only trap that is outside is the shower. If I were to use it, I guess I could dump antifreeze in the drain after using it.
