Turn on tank heaters if you have them and use the plumbing just as you would normally. If you don't have tank heaters then keep in mind that water can freeze when the area it runs in is below freezing but with most non four season RVs the heat leaking from the living area is sufficient to keep pipes thawed until well below freezing. Windy conditions will cause extra problems as wind will blow that leaking heat away rather than keep in in the belly so there is really quite a few variables to consider. Another will depend on just where you're camping. Usually during winter months primative campgrounds and certainly disbursed areas are almost non used so dumping gray water would likely do no harm. When it's just the wife and I we can go two weeks on a single filling of black tank by being cautious about OVER flushing. A shower every other day has been our routine for clensing during dry camping over the years and that gives us a week of showers, dish washing and grooming. We carry enough water to fill the fresh tank once in jerry cans and there's the second week.
I wouldn't be afrade to UNWINTERIZE then winterize again when you come home. ONly talking about a half hour or less, twice.
