I don't think it is a wattage capacity issue. My Prosine 1800 would run my Dometic microwave just fine. I think it is 1200 or 1400 cooking watts and pulls about 1700 watts and 165 amps from the battery.
IMO your issue is low input voltage from a combination of smallish battery and smallish wire. I am surprised you don't get a low voltage error code or warning. Mine is wired with 4x GC2 and 4/0 wire and I consider this marginal for 2 to 5 minutes of microwave time.
My inverter was in a smallish compartment and would complain of overheating if used more than about four minutes... just saying to also review your ventilation.
