You need to shut off the other loads when running the microwave.
Before changing the wiring or anything else, just try it on MW alone as is. No fridge , water heater, converter! Just the MW.
Some inverter wiring specs call for the ability to handle the surge rating of the inverter, so are way over what you really need just to run something. A 2000w inverter will have a surge rating of 4000w. If you wire up for 4000w that is somewhat :) more than the 1500w draw of the MW!
Some guys on here with AGMs report they can run a big MW just fine on a couple of 12v AGMs. AGMs can take a much bigger draw with less voltage drop than Wets, so you should not need more batteries based on what others get with theirs.
You said you were also running other big loads---that is your actual problem IMO.
