This may help some, at least with regard to which pin positions do what. The 6-pin is missing the backup light function -vs- the 7-pin so will likely be unused on your horse trailer.
It's likely your trailer colors match the 6-way standard and the 7-way you bought matches the RV 7-way (middle one in the link above). Pull the cover on the new connector to verify.
You should be able to find where the ground wire attaches to the trailer frame. Once you know the ground wires, you can bring a car battery over near the trailer and connect the negative. Then try the various wires with the + to see what lights up.
