Why?
Because I like to do it. Not because I'm not as smart as someone else, but because I like to. Sure I could drop the stabilizers further, but that's more cranking. I'd rather drop a few blocks on the ground and crank less.
There is a theory that by cribbing under the blocks the stabilizers will be more stable. I have no idea if this is true. Ultimately I don't really care if it's true, It seems plausible to me and it doesn't hurt me, so I do it. Plus it's kind of like using Legos, or to use a more up to date analogy, it's like playing Minecraft. :)
With stabilizers that "swing" down as you crank, they are definitely more stable the less they are lowered. They start out flat and swing down to nearly vertical. The more vertical they are the more they'll wiggle (think table leg versus angle brace).
