If you're running that hot it very likely is not your thermostat. Possible it is opening way late, but normally they either work or not.
On a 30 year old rig depending on how often your antifreeze was changed, it is more likely that your radiator is plugged, or the fins are full of crude.
If there is a chance of creating more damage by changing a part that is more then likely OK, I would leave that for last. Instead I would spray the fins with 409 and let sit a few minutes then lightly spray them clean.
I would also buy a backflush kit from Walmart and some radiator cleaner. Read the instructions on both and give it a try. Make sure you run plenty of clean water through the system. Then drain and put new green stuff in. If this doesn't fix the problem then go and see if you can break those bolts free.
