Don't just trust the dash temp gauge ("gauge" term used loosely) ... shoot the radiator, hoses, thermostat housing, etc with an I/R thermometer gun to cross check ... can dip the coolant with a thermostat as well, but you run the risk of hot coolant with the cap off - standard safety warnings apply.
On a related note: Is your engine actually running too hot? The gauge might be off, and the engine and related cooling system might be fine.
On a F150 work truck that I had back in the '80s (5.0 engine), I got so tired of crappy, failing thermostats that I ended up just removing the thermostat altogether... ran fine for years after that! (legal disclaimer: Do not do that, follow all manufacturer's guidelines)
