I think that's because folks who enjoy camping without hookups already know that a residential fridge won't work for their needs and so never make that choice.
At this point in time, residential fridges are most common in large rigs. Folks going large are unlikely to be looking at dry camping and/or boondocking, but are looking at a home on wheels.
I do suspect that smaller rigs will start copying the bigger ones and will come standard with residential fridges in the future. I think at that point, you may find folks who change from a residential to an absorption because they don't want to be tied down to hookups and generators.
