I'm really worried now that I got home and discovered that the thermostat was set to "on". Could the AC have kicked on while we towed? Could this have damaged the unit? While I'm at it, why does ...

AC will only work while connected to shore A/C power. You will have to test to see if your Tow Vehicle is supplying power to your trailer. If it wasn't equipped with a tow package, then someone would have to run a power wire. If it does have a tow package, sometimes a relay or fuse needs to be installed.
Ok thanks. The wiring was installed second hand, by Uhaul. Not exactly sure what they did except that it's a 7 pin.
Would it be worth adding to run the fridge? I'm not totally confident that it runs correctly on propane.
