I'm really worried now that I got home and discovered that the thermostat was set to "on". Could the AC have kicked on while we towed? Could this have damaged the unit? While I'm at it, why does ...

Probably has to do with the fact that you have been a member on forum since 2008 and just now figuring out A/C unit runs on 120V AC Power.
After 7 yrs. one would think that folks would have a basic clue about trailer systems.
