We all hate generators in concept compared to solar but they do what they do very well. It just seems like you are building a lot of infrastructure around a temporary problem. Later on if you only want to charge power tool batteries, lap top, phone, you can get by on far less. In fact you could probably get by with simply using a cigarette lighter inverter in your van as it is right now. If you mounted a $200 1000 watt inverter genny on a lockable removable hitch receiver you may also power something like a small window ac unit someday. If you sold it on CL you would probably be out half you cost or so.
With a Safari van it doesn't seem like you will ever have enough roof space for much solar so any living that requires a decent amount of amp hour replacement or amp draw will do best on a generator. When it comes to socking big amps into a battery it's easy for a genny yet requires an impressive solar bank. Then you have the days that the sun dont shine so back to the dang genny.
I like the small propane cook stove that Mex posted. Probably $39
Either way let know how it goes as we always learn from this stuff.
