IMHO and experience you need a minimum of 20 gallons, 60 is preferred, in reservoir size in order to safely blow out water lines for winterizing.
Once the initial bulk of the water is blown clear you need a compressor that can hold a minimum of 50 psi continuously with a tap or fixture open.
Anything less than that means you have droplets of water left in the lines that can gather at a low point and burst a pipe when it freezes.
