If the coffee pot is the only problem you have with your setup, I think I'd just seek and alternative to solving the problem. You can spend a heck of a lot of money in trying to increase battery capacity or even trying a different inverter for the task.
I think I would seek a smaller coffee pot? Or just forget the elec coffee pot idea completely and just use the stove to brew the coffee.
