Any absorption fridges that do not require 12 volts to run?
Are there any 12 volt LP gas fridges that will run if the 12 volt battery dies, or are all new models dependent on having this?

Once again it depends on the age/quality of your RV water heater. But yes they have computer boards to control things. Maybe you know it by the name of a circuit board.
