I'd have to disagree with your statement as well. In the 17 months since I installed solar, I have not "plugged in" except to run experiments or to precool the refer on 120 before a trip. The longest outing so far has been 13 days. I have had mostly good weather so I'm still waiting to see how it will do under less ideal conditions.
I have to resist the temptation say that anyone can do it, because everyone's situation is unique. I'm blessed to have sunny skies and relatively cooler temps here in Colorado.
I've even added an electric coffee pot and toaster since adding the solar. Most trips have "required" some use of the furnace so by the time the coffee and toast is made I'm usually down 60 to 70 Ah. Between recharging and providing power during the day the solar output averages better than 100 Ah. More is available. By afternoon the controller is in float and the bank is drawing less than 1 amp.
Maybe when you get your MPPT controller you'll see what you've been missing.;)
