If your happy with your current setup, adding a 3rd 12V will give you some extra AH margin. 12V have the advantage of usually lower initial cost, better suited to high amp draws. Disadvantage is usually shorter service life and not likeing discharges below 50%.
6V have the advantage of potentially longer service life and the ability to be discharged to around 25% SOC repeatedly and still give 100's of cycles. But at a likely higher initial cost and not really well suited to high amp draws like an inverter.
So, sound like your happy with the 12V setup, no reason to change. Get 3 good deep discharge or marine batteries, keep them maintained.
