Winnebago uses a pex elbow in that location among others such as at city water connection and faucets, with pex crimped to one leg and flexible pvc tubing crimped with a pex ring to the other leg which connects to the water heater.
Pex fittings are not made to have pvc tubing crimped to them and that is most likely where you'll find it leaking when you open it up. PVC tubing uses clamps and barb fittings. I have never seen an elbow made which is pex on one leg and barb on the other. Cut the pex clamp off the pvc and trim it, reinstall on the pex elbow with two small band clamps. Cross your fingers and hope. It usually works and is about the best you can do as you'll not usually have enough room to do it correctly which is why they booger it together that way to begin with.
Cheap and fast manufacturing like lots of other brands. We had the same garbage methods used on 2 Grand Designs, a Keystone, and a FR Rockwood. They all eventually dripped at those locations, just a matter of time.
