Niner, Another way of putting it, is to say the AC compressor may cycle off while other normal loads are present then restart in normal fashion. This would cause a high-head restart, while other hotel loads are present?
Also the converter/converter/perverter/charger was not mentioned in the hotel load scenario.
Not only did the OP not mention the compressor automatically restarting after long run times when head pressure would be much greater but he also didn't mention ambient temperature at all ... BIG difference in load when that compressor is trying to start in 100F temps compared to 70F temps! At the very least I'd be checking to see if that A/C unit is equipped with a hard start cap and if not, add one, just as I've done with the last two A/Cs I've owned, including my current 13.5K BTU Dometic Brisk II which benefitted enormously. FWIW, I've also found that both my EU2000i gensets deal with heavy loads that stretch their capabilities much more easily when running on synth rather than dino oil.
