Sounds like things are coming together for ya. Nice to do the research on the systems in your rig beforehand and over building is not a bad thing.
We have only 330w of solar and it seems to work for us, compressor fridge and all.
With 1200W of solar, unless your rig is set up like the Playboy mansion, when the sun shines, you'll be able to pay for your trip by selling the excess daily power back to Con Edison.
