This thread is about 50A service and not what the pedestal might have, but to answer your question I would simply plug in my second 30A service cord into the 15/20A outlet on a pedestal that doesn't have 50A service using one of the typical 15 to 30A adapters like you would use to connect a 30A shore power cord to a normal household outlet. This second service would basically be like an extension cord with two outlets on it protected by the CB on the pedestal. The two 15A CB in my second load center is because I'm feeding that with 1/2 of a 50A service so those protect my wiring inside the trailer to the two outlets. An additional advantage since all the outlets on the second service would/should work fine even on a GFCI CKT and are resistance only loads. In this mode of operation I would then have 45 or 50A available instead of 60A. If one had only a 50A service with the pedestal you are describing might only be able to get 30A since generally the 15/20 pedestal service is GFCI which doesn't often work trying to feed 1/2 of a 50A service panel.
BTW I only have a 30A Progressive Industries EMS on my factory 30A side since as I said the other side only sees resistive loads so an EMS really is not needed.
