W/o telling us what converter/charger you have, I don't know why anyone would tell you to change it. Most any converter/charger in any later model RV is well capable of charging any kind of battery. (AGM or otherwise) If you want faster charging on generator, you may want a larger converter, and large converters require larger wire to the batteries.

You're making it complicated.
Change to AGM if you don't want the most amps for the bucks.
Add the solar.
Don't change anything else, except turn off your converter/charger when shore power is connected to inverter.
After inspection it looks like I have a
New Mark Model PCS 30 RACWith Battery Charger
Input 120 Volts AC 60Hz 4.6 Amps
Output12 Volts DC NOM 30 AMPS
5 Amp Charge rate is part of total load
Converter PictureThe breakers beside it only #1 is labeled. its a 30AMP breaker
"30 AMP MAIN" then 4x are 15 AMPs and 1x 20 AMP breaker. Do I flip one of these ones to turn off the converter if I'm plugging shore into the inverter?
BreakersOutside the vehicle near the shore power cable there is a panel that opens to what seems to be my fridge. There is an outlet there with a cord plugged in. Not really sure what this one is for, I'm thinking the fridge is whats plugged into this baby?
