Is there a way to prevent some from discharging more then others? Also What kind of wire do you recommend to wire these babies?
If you wire all of them in a series-parallel config and it's done correctly, there will be no inordinate difference between them. All should discharge/charge closely. Wire size will depend on assumed loads and charger characteristics, along with distance between. Running a 1000W inverter at maximum will result in a draw of approx. 80 amps. You'll also have other items powered so wire should be capable of those draws and some headroom. I would suggest AWG 1 would be a good size. That size cable is available at welding supply stores.
