I think your use numbers are too conservative and your potential solar charge numbers are a bit liberal. I would take a WAG at your fridge using 40+ AH/day and your harvest at more like 30AH/day on average.
I use a small 120V fridge through an inverter. I have a bank of 300AH and a single 235W module. I have very low draws other than the fridge if I don't watch TV, use the computer, or play the stereo. I have no 12V operated circuit boards, appliances, or alarms, only the water pump compressor and fans, if used. I think I can go 2-3 days with no sun but haven't hit that situation yet.
