Do they make solar/AC/dc power converter jobbers...
Why don't htey come out with a power center that does it all? Or do they and I am too tired or dumb to find it... It'd be nice to have it all wire to one center.... No?

This is exactly the sort of thing that I did for the owners of performance cruisers (big fast sail yachts) before the depression.
I can answer your question very easily...
And, there are two answers...
1 - Because you if you have to count on it and one section goes down for what ever reason, you don't want the entire system down.
2 - Because there is no "One Size Fits All" answer.
What size house bank?
How much solar?
How much inverter?
If you want it, I will build you one.
