Then you have a freeze sensor on the interior. Remove the inside panels for access. Very common for the sensor to be poorly installed or to fall away from the evaporator and effectively do nothing. Sensor will cycle the compressor to prevent freeze-up.
And yes check the interior plenum divider while you are in there. Again they are often poorly installed and need to be repositioned and sealed with duct tape. Plenum divider keeps the air-in from mixing with air-out. Poorly installed will allow air to just recirculate in the machine instead of cooling the RV.
