I have a Dometic refrigerator that has never gotten as cold as I would like. That sliding probe adjustment inside the refrigerator to control temperature is a joke. The unit is operating normally....

YES......
But OP is just guessing at the temp....so really don't know if fridge is not properly cooling.
OP..you need to 'measure' actual temps.
Glass of water with thermometer in it........leave overnight and then check temp.
Have you checked backside of fridge for any obstructions to air flow/draft?
Have you checked the installation of fridge for proper set-backs/clearances/no dead-air spaces as recommended by Dometic (RV mfgs. don't always install fridges correctly)?
Any obstructions at roof vent?
