No idea if the Easy Touch RV thermostat would solve your problem. It can be set for a narrower "changing differential", but that may have the same result on the control box. An expensive "see if it works" solution...
As to the thermostat itself, if it controls both the AC & furnace, a household thermostat cannot replace it. As Doug points out, it sends a "control" signal to a box of electronics that then switches the AC or furnace off & on. As far as I know, the Easy Touch is the only alternative to the Dometic thermostat. I like the Easy touch much better - easier to set, shows the interior temperature, and provides both WiFi & Bluetooth control from your phone.
