If the selector switch is off, shouldn't all 12vdc be turned off to everything?One would hope but the fridge circuit probably has standby, relay, and timer loads that have that minimal draw. It may have other loads, also but I don't have an absorption fridge to check what others are there.
There is probably a 12V input connection to the circuit board of the fridge. It would be easy to interrupt that with a switch but I don't know if that is advisable.
