More than likely they all started with a stay-closed catch that is still working on the drawers that stay closed.
There are various stay-closed drawer slides available. Replacing them isn't a terribly complicated procedure, though it can be somewhat fiddly especially if the replacement slide dimensions are not quite the same and some shimming or routing out or whatever are required.
The drawers in my motorhome (and a couple of other RVs I've seen) use a sort of gravity drop system to hold them closed. The drawer has a slight fall once it's all the way in, and the front must be lifted slightly to open it. This works very well at keeping the drawer closed while underway and has very little that could wear out or break down in the "mechanism."
