The ground isn't counted, 10-2 is a black, white and ground. 10-3 is black, white, red and a ground. UF stands for Underground Feeder, it's rated for direct burial. UF cable doesn't have any paper wrapping in it like NM (non-metallic) cable that you would use in a house.
Yeah, I grew up in East Meadow, and we lived in Nesconset up until we moved for my work in 2011. Years ago we put up a new sign at our church, St. Mary's in Lake Ronkonkoma (the brick and stucco church on lake Shore drive that overlooks the lake.) I volunteered to run the electric to light the sign, and step #1 was to rent a trencher. I called all over and the rental yards told me they didn't rent trenchers. Only guy I found that had one for rent was in Middle Island. That was several years ago but figured it might save you a few phone calls.
