Have you tried the microwave just to compare? Say you used 500 watts for a total of 8 minutes in the coffee maker. SWAG for the microwave might be 1500 watts for 2 minutes (not sure if it would actually take more or less).
You might be ahead not considering Peukert losses. With that huge battery bank, I am guessing those are small for you when taking out only 1500 watts.
