Have you tried shutting off the converter/charger when trying to run the AC? Have both fridge and water heater on gas.
Just flip the breaker, the only caveat is sometimes they tie a few 110 outlets on that same breaker so you just have to check. What I did with mine was disconnect those 110 outlets from the breaker and add another breaker for those circuits. So know the converter is on its own....
