Unless you actually see grease flow out the front of the outside bearing, you've done nothing to grease it. Your just putting a little more in the void of the hub each time (and probably onto the shoes).

They will. Greasing every year is totally unnecessary. What you were doing did no good or harm.
Reallity is, the same kind of bearings have been used in cars for 75+ years. They usually only got repacked when brakes were replaced. I've pulled hubs out of junkyards that were 50 years old and never had grease changed. Bearings were still serviceable.
THis yearly stuff is CYA stuff. A check of brakes and bearing condition is all that is needed. If they're still tight and smooth then they're good for another year. Or ten.
