Have Lots Of Confusion On My Batteries and Voltage

Yeah, what they said: the voltage under load is not indicative of the state of charge, it is indicative of the nature of the load on the battery. To determine the state of charge, you have to shut off EVERYTHING and let the battery bank sit and think on it for a little while.
