Humid there? You need to check if the unit is icing up.
Wall thermostat? If so it should have a freeze sensor. Very common for these to be poorly placed or fall away from the evaporator. Remove the interior trim to check it out.
Also many have the plenum separation poorly installed. This allows the cold and warm air to mix in the unit instead of being forced out into the RV. This can also be inspected after removing the interior trim.
Might be worth having a mobile RV technician come out to service and check the air conditioner.
Keep the fridge and water heat on propane only to conserve power.
