I agree with few other people here - you need to re-think the whole project, starting from the user's habits. Try eliminating that once-a-day Keurig. Switch to stove-top coffee, or press-variety. Or tea.
If I were a manufacturer, I would've put a big warning sticker on that Keurig, like those safety etc warnings that you see in manuals of most electrical devices: NOT FOR USE IN RV :)... And another warning on all 4 walls of the trailer: NOT FOR USE OFFGRID. Our rigs are made for use with permanent 110V hook-up and at constant 77F with no rain or snow.
