HELP!...What can I do to keep fridge cold and food safe?

I have put several of those blue ice things in the refrigerator while traveling.
At night, when hooked up to shore power, put back in freezer for next day. Have also used clean dish pan with ice in it.

Have done the ice chest thing, but extra work. My refrigerator stays at 40 in the FL heat during the day, on gas or shore power. Keep a thermometer in refrigerator and monitor it.
