While you are correct that there are not many RVs that have 240VAC appliances, all RVs that are wired with 50A service do, indeed, have 240VAC coming in to them. Those RVs are nothing more than tiny houses, with 2 hot leads, a neutral lead, and a ground lead. The 2 hot leads enter the RV and tie to each side of the power distribution box. If you were to install a dual pole breaker in that distribution box you would have 240VAC available to use.
If you find a campground that provides 50A service and you do NOT measure 240VAC across the two hot leads then they have not wired their pedestal correctly.
