Came into this topic late, but if the trailer or camper is much farther from 1/2 bubble out I don't think it is very 'comfortable'. If your doors swing open or shut the rig is most likely not within the 1/2 bubble, nor is it very comfortable. We use the bullet level and the small levels shown above and they both have worked well.
From the OP it seems like the fridge isn't cooling as it should even when level. Ours is going on 12 years without a problem and the rig we sold last year the fridge was over 15 yrs old. Most always they were inside the 1/2 bubble, which is well within the 'comfortable' area of level. As far as 2X12 being strong enough I have used them under the jacks on our 39' DP, and they only cracked a little bit:)
