The GP3000 can power those items full time or you can install a 30 amp transfer switch. Pop a 30 amp breaker into you main panel to feed one side of the transfer switch. Inverter feeds the other side of the switch. Transfer switch will choose one of the two and feed power to the 30a subpanel.

Yes you will move the branch circuits you want to run on inverter power..... off the main panel and onto the subpanel.
Yes you should have six+ batteries to properly drive 3000 watts of inverter.
