"20ft solar cable with MC4 male and female connectors" means what it says - 20ft cable with male MC4 on one end, and female MC4 on another end. If the panel has MC4 pigtail, you cut your 20ft cable in half and use MC4 ends to connect to the panel, and bare ends - to connect to controller. If panel has no MC4, then you cut those connectors off and use bare ends to the panel as well. In any event, with 20ft cable you will only have 10ft distance from the panel.
Again, I think that your best bet is to roof-mount as much wattage as possible. Your scenario is similar to truck campers - their rigs are smaller yet than your trailer. At today's panel prices they go for 180-240W, usually a pair of 100-120W panels. You won't find much shade in Baja, so having a portable to be able to park in shade and keep panel in the sun - is not the case. To think about it, a pair of panels on the roof will work as a palapa, sort of.
PS: Can only recall one place in Baja where there was "some" shade under trees - desert camp Santa Inez in Catavina. It's not on the coast.
