You tested the GFCI receptacles in the RV?
You are not understanding ground fault circuits. At least three guys have posted in this thread that your problems are with the generator wiring and the water heater. If the GFCI receptacle or circuit breaker that powers your shore power detects a fault between ground and neutral, it will trip. Plugging into a non-GFCI receptacle and everything works reinforces that diagnosis. Your problems have nothing to do with the GFCI receptacles in the RV.
