Is the oem battery box in the middle? If so, consider staying with twelve volt jars and having three in total. Wiring for three 12 volt needs to be balanced.
The interconnect cable for twin 6 volts needs to be as large as the combined size of all the connections to the positive post on the existing system.
Two six volt will do about 232 amp-hours max
Three twelve volt will do about 375 amp-hours max (provided there is room for the group 29 format)
