Measuring solar yield approaching winter solstice

I need to get a temporary setup on the RV roof to measure solar yield around the winter solstice. How deeply discharged will I need to get my 85 Ah battery so that it allows pretty full production ...

I do not know if you have one yet, but a clamp-ammeter could be used to check the amps coming from the solar-panel to the battery. The reading should be done on one of the wires connected to battery with aligator clamps.

You could check amp readings each hour after sun-rise to create a graph to cover to noon, or beyond.
