I don't doubt your plumbing experience. But water in an enclosed container and under pressure is not necessarily the same as a pan of water. And there may be air in the water which could be a factor. The air could come from the top of the HW tank or in the case of a RV from the empty hose during hookup.
Open pans of water which I was referring to have none of those characteristics.
