I had problems with ice on the refer fins until I found the auto defrost switch and turned it on.

Turns out I have a single door top freezer Dometic so this may not apply to a Norcold, but the switch on mine is either at the top of the freezer door or refer door opening - memory is fuzzy on which. Anyway, its not readily view-able w/o bending over and looking up.
