I would put 1 gallon of RV antifreeze in the black and grey tanks. That should keep them from freezing. May get a little slushy. Ours had heating pads on the external tanks but I never used them because of battery drain.
Our fresh water tank was under the couch. If you can remove the bottom cover then air will circulate around it, the water pump and water lines. The biggest problem is the space back around the shower and the hot water heater. If you ran the hot water heater that would provide some heat to areas around it. I would get a couple of small computer fans to provide air flow in some of the less accessible areas. Computer fans do not draw a lot of current, especially if you can reduce the speed. Leave doors open where they could provide warmer air to plumbing.
Would not try to use the shower in the unit, but you can take a "Navy shower" that is what we do when boondocking. Basically just a pan of water and a wash rag.
I would recommend upgrading to a good multi-stage converter as it can do a boost charge that is faster so you don't have to run the generator as long. You might also get an AGM battery with a battery selector switch. We put the AGM in the living area...keeps it warm and it does not out gas or is very very low. That would give some reserve battery power.
There are a number of people who use their three season class c motorhomes for Winter excursions...snow mobiling, skiing, etc. It does take some planning and attention to detail.
As some have said, one way is to Winterize the water systems and just use the Motorhome pretty much as a bed room and kitchen.
